Owners/Innkeepers of Nicolin Mansion since 2003, Kevin and Terri Knox have had a lifelong passion for hospitality. After honeymooning on Mackinac Island, we fell in love with B&Bs and began seeking them out for anniversary and birthday celebrations. We found mentors in New Ulm, created a list of features in the perfect building, and then fell in love with Jordan and the Nicolin Mansion.
Terri’s hobby of soap-making led us to this particular building. During her day job as a software engineer, she began crafting soap with a fellow engineer. Another fellow engineer revealed his nephew owned a home in Jordan, who planned to open it as an boutique featuring Minnesota artists and craftsmen. Turned out to be the same mansion that we had fallen in love with while living in Prior Lake and antiquing in Jordan! Since Terri lived closest among her co-workers, she was sent to show the soap wares, and discovered the mansion had everything on that list of that perfect building. The order was made, the soap was created, and Terri asked Kevin to join her on the trip to deliver the soap. While Terri finished business with owner Laura, Kevin was taken on a tour of the building by the other owner Troy, and shared our vision of opening the mansion as a bed and breakfast. After the tour, Kevin agreed, it had everything on the list. So as we left, Kevin said “If you ever want to sell, let us know.” About one year later they called, wanting to sell in order to open the Chateau St. Croix Winery, and we took on the adventure!
We spent four and a half years renovating and creating the Nicolin Mansion Bed & Breakfast, designing the rooms using all the former owners as inspiration. We hope you enjoy the fruits of our labor steeped in the history of those who came before us.
In addition to being an innkeeper, Kevin is an exceptional guitarist, and has worked on several CD projects. He is also owner of his own painting and remodeling company, skills which were invaluable during the Nicolin Mansion renovation process. Kevin is currently working on writing the childhood stories he created for this daughters, Tiffany and Jordan, into published children’s books, with Jordan commissioned as illustrator.
Terri enjoys gardening, photography and crafting, including making the custom soaps for the B&B. She is also a software engineer, which is helpful as webmaster for Nicolin Mansion’s online presence. Terri is currently working on writing a memoir cookbook with her 97-year-old Gramma, chronically Margie’s love of family and friends through the food she made.
Jesse and Noah have grown up in this inn, they were 3 and 4 when we began this adventure in 2003. An experience that has created a very fine character in them. They have learned a life of stewardship, putting others before themselves. Home schooling in a different sense. We remember the candy put on the buffet for them that they didn’t eat, for days, until they were invited. The tours given in their dress shirt and ties at open house events to those eager to finally get inside this building. And their first jobs helping cook breakfast, serving guests, cleaning rooms, building fires, and occasional entertaining on the piano. Their innkeeper training has equipped them for anything life will throw at them as they venture off into their college careers.
