Recipe #2 in our 2012 edition of the 12 Days of Christmas Cookies. These are a nostalgic family favorite of ours! We prefer to eat them plain, but many like to fill these wafer cones with whipped cream.
[li]3 eggs, well beaten[/li]
[li]1/2 cup sugar[/li]
[li]1/2 cup melted butter[/li]
[li]1/4 teaspoon salt[/li]
[li]1 teaspoon almond extract[/li]
[li]1/2 cup flour[/li]
Beat eggs well. Add sugar, melted butter, salt and extract. Beat well. Stir in flour.
Heat krumkake iron on medium heat. Put a spoonful of batter on iron (I use a small gravy ladle). Follow baking instructions for your krumkake iron. If using a stovetop iron, bake one minute or less, turn iron over and bake until very lightly browned. Remove from iron and quickly roll on cone-shaped form.
Store in airtight container.
