Maple Fennel Country Sausage Recipe
Featured as our May 2017 Recipe of the Month, this is the perfect sausage for our signature Scotch Eggs. The sausage also can be formed into patties or meatballs. Fennel seed adds that special touch.
Combine salt, pepper and fennel seed in bottom of a bowl.
Add pork and mix to combine spices.
Pour maple syrup over pork and work the meat again to combine.
To prepare patties: Form meat into patties, 2 to 3 inches round. Cook patties in 1 tablespoon oil in a nonstick skillet over medium high heat for 4 or 5 minutes on each side. Drain sausage patties on a paper towel. Serve warm.
