Scotch Eggs Recipe
Featured as our June 2017 Recipe of the Month, this is one of our favorite recipes we brought with us from our pre-B&B days, and it’s become a signature dish at the Nicolin Mansion. Traditional recipes call for them to be deep fried, but we prefer this baked version. Did you know that (besides at the Nicolin Mansion, of course), you can find Scotch Eggs at Minnesota events, including the Renaissance Festival and the Minnesota State Fair (on-a-stick)?
Preheat oven to 450°.
Divide sausage in equal parts for each egg. Wrap each egg in sausage, completely covering the egg.
Dip into the beaten egg, then roll in the bread crumbs.
Place eggs on a baking sheet, we prefer a stoneware pan.
Bake in oven for 30 minutes. Can be baked at lower oven temperature for a longer time if preferred.
Serve hot, placed on top of white sauce.
